White Sea Urchin
Sweet, buttery roe collected from cool winter waters and packed fresh or live. Available August to December when the roe is brightest and richest. White urchin offers a more delicate, subtle flavour profile compared to its red cousin.

Seasonality
White Sea Urchin is in season from Aug - Dec. This is when the product is at its peak quality.
From Ocean to Table
White urchins thrive in the cooler waters of late winter through spring. Our divers know exactly where to find them, selecting only those with the plumpest, most golden roe. The cold water gives the uni its characteristic sweetness and buttery texture.
Sustainability
- Seasonal harvest windows
- Hand selection of mature specimens
- Rotational reef management
